BLUEBERRY CRUMB CAKE

I have this little notebook where I scribble down recipes as I find ones I love. I would always take it with me when I worked as a pastry chef, making notes about what worked in the recipe and what needed tweaking. Even though I’ve hung up my apron professionally, I still bake all the time and recipe testing is something I do without thinking about it. It helps to make a recipe my own. Adding special touches to foods you enjoy in your family is what makes it yours, and that’s how families create traditions. See? Cake is important!

This simple cake is one I’ve made countless times because it’s a wonderful blank canvas for anything I mix into the batter. This recipe, called One Perfect Cake, comes from Food52.com, which is a great resource for baking and cooking.

I gently stirred in about 8oz of blueberries after the batter was mixed. Frozen berries work, too! Check out this easy recipe for streusel topping, which I sprinkled on top before popping the cake into the oven. Voila! For sure, that’s one perfect cake.
